Christmas Cookie Recipe

The holidays just aren’t the same without some delicious cookies. And these are by far my favorite cookies… pretty much ever. They’re called "Krinkles and they’re buttery, sugary and just delightful! They’re great for a cookie exchange, a gift or just as a special treat-yo-self cookie. The original recipe (which has been passed down in my family) calls for the cookies to be iced and decorated with sprinkles. Another option is to use the dough and then create a thumbprint in the middle of each cookie and fill with jam for a thumbprint jam cookie. Swedish Christmas Cookies

KRINKLES

  • 1 egg

  • 3 sticks of butter

  • 1 cup of sugar

  • 1 teaspoon vanilla extract

  • 4 cups of flour, sifted

  • 1/4 lb. almonds (ground) - you can also use almond meal

In a standing mixer, cream the butter, sugar, egg and vanilla. Slowly add in the flour and ground almonds. Once the dough is combined, roll into 1-inch balls, and press down with a fork.* Place the cookies on an un-greased pan and bake for 8 to 10 minutes at 400 degrees (the bottom of the cookies should be a light golden brown). Transfer to a wire rack and let cool completely before icing.

*If making thumbprint jam cookies, follow the above recipe/steps but instead of pressing the cookies down with a fork, use your thumb to create a dent in each cookie and fill with your favorite jam (I like raspberry best). Then follow the directions above to bake.

ICING

  • 1/4 cup butter

  • 2 cups confectioners sugar, sifted

  • 1 teaspoon vanilla extract

  • 1 tablespoon milk

In a standing mixer, mix together the butter, sugar and vanilla extract. Add in about a tablespoon of milk and mix again. Add in more milk if needed until the icing reaches a good consistency. Ice the cookies and top with sprinkles, if desired.
